中文摘要 有機農業發展至今已達6千餘公頃,隨著消費者對於有機農產品的需求增加,對於有機農產加工品的消費亦日益增加,且隨著國內農村旅遊人口逐漸增加,發展結合一級生產、二級加工以及三級旅遊休閒的農業發展為未來發展重點。因此在有機農產品多元加工技術以及品項的開發日益重要。 如北部地區有機甘藷、芋頭、茭白筍及綠竹筍等農產品初級加工之研究,增加芋頭及綠竹筍加工產品多樣性,提供消費者新選擇,提升附加經濟價值及產業競爭力。有機蔬果與甘藷栽培管理技術研究:原住民地區分佈廣泛,大多從事農業生產,地理環境具有先天優勢條件,但離銷售市場距離遙遠,其生產之農產品成本運費無法與平地相提並論,因此,朝高經濟價值的作物栽培以維持家庭生計,以低成本、耐儲運且市場價格平穩的農作物來減少風險,敏豆是原鄉地區主要的經濟作物之ㄧ,其投資成本低且市場價格7-10月相對較平穩的作物,雖然耗時費力但有採收就有收益,因此,受原鄉農友所喜愛。 近年來有機栽培品種選育、栽培管理模式及技術之建立方面,多集中於水稻及蔬菜;而果樹及雜糧作物之投入則稍微不足。目前已利用改善種苗狀態以降低鳳梨果園的生產成本,已開發有機鳳梨種苗繁殖技術,並尋求落實之方法。為提升鳳梨果農之收益,同時研發有機鳳梨果實加值利用之技術,並探討與有機甘藷品質之分析。有機百香果和紅龍果加工技術研發:火龍果和百香果皆屬於熱帶及亞熱英帶作物,為夏天相當受歡迎的水果,臺南、南投及彰化為臺灣主要產地,近年種植有逐漸增加趨勢,未來將有可能面臨生產過剩的問題,透過改善有機加工品質、天然有機添加物等有機加工技術開發,以增加有機火龍果與百香果市場機會,並創造有機產品附加價值,提高有機農民收益。有機紅龍果萃取粉多元化利用研究:利用有機紅龍果萃取粉開發製作有機紅龍果香腸、飲品等產品,藉以增加紅龍果多元化利用,並提升食用安全性及果品價值。 近年來原民產業的發展逐步受到關注,發展原住民有機農業及其特色農產品加值化為近年研發重點,原住民部落保存許多具發展潛力之特色作物,如:小米、樹豆、臺灣藜及洛神葵等作物之品種、有機栽培技術、病蟲害調查及加工技術等,以及強化產業價值鏈,引導部落青年回流,以活絡部落經濟,維護農業生態永續發展及提升產業競爭力。 對於有機農產業的發展,消費者是關鍵,瞭解消費者的消費傾向、消費意願進而促使消費者之消費忠誠度提高,將能使有機農業更永續發展。在花蓮地區有機農產品地產地消顧客忠誠度之研究方面,地產地消強調「在地生產,在地消費」,藉由縮短生產者與消費者的距離,達成減少運輸成本,幫助活化農村,以活絡地方經濟達成農業永續發展,而目前台灣已輔導有機農產品地產地消之銷售據點計有農夫市集、農民直銷站等,透過探討消費者對地產地消認知及購買意願,了解消費過程中會受到哪些相關因素干擾,故以顧客忠誠度為研究主軸並進行量化分析,以有效建立市場區隔,提升地產地消經營收益。
英文摘要 Development of Primary Processing for Organic Sweet Potato, Taro, Water bamboo and Green Bamboo in Northern Taiwan To investigate the best processing method for dry taro mud and the flavoring of green bamboo byproducts' soup. Increase variety processing products of taro and green bamboo. Offering new choices to consumers and improving additional economic worth and industry competitiveness The study of organic vegetable fruits and sweet potato on cultivation and management Indigenous region widely distributed, mostly engaged in agricultural production, the geographical environment has inherent advantages, but distant from the sales market, the cost of shipping agricultural production can not be compared with the ground, therefore, toward the high economic value of crop cultivation in order to support their families, low cost, resistant storage and transportation and stable market price of the crop to reduce the risk of sensitization. Beans are the one of the cash crops that low investment costs and the market price from July to October is relatively stable crop, although time-consuming but there are benefits laborious harvest, therefore, favorite for Indigenous region people. In addition, Taiwan's imports of dried mushrooms are mostly based, while the wood mushrooms station market 5%, northern, mountainous homeland mushrooms cultivation and favor the natural environment or simple facility, restricted heavy labor and other factors of the wood is not easy to obtain, though mushroom mainstream market but deep indigenous region special industries. The agriculture research is focusing on the organic farming lately. Most of the organic crop breeding, cultivation management and technology research are on rice and vegetables, but not fruits and grain crops. The first stage of this study were organic rice breeding (till 2012) and pineapple propagation improvement research for reducing planting cost (till 2014). It’s the second year of this study, continuing the pineapple propagation improvement and pre-planting treatment techniques research in the specific organic pineapple farm. To increasing the organic pineapple farmer’s income and the value of the pineapple processing products, developing and testing the new processing products with organic sweet potatoes. And this study also analyzes the quality of sweet potatoes. Development of the processing technology for organic passion fruit and dragon fruit Dragon fruit and passion fruit are tropical crops. They are popular in the summer. Peak season for dragon and passion fruit is from June to December, the largest cultivation regions in Taiwan are Changhua, Nantau and Tainan. In the recent years, their acreage are increasing. The overproduction problem may will be a issue. This project is intended to enhance organic fruit market opportunities by developed the organic passion fruit and dragon fruit processing technology, included improve processing quality, and development organic additives materials products, creating opportunities to add value to products, enhancing the organic farmers income. Study on the multiple uses of organic dragon fruit extract powder Dragon fruit (Pitaya) has high climate and environment adaptability, with an easy shoot-rooting propagation character, a short juvenile stage, high yield, drought tolerance, low pests and diseases, which is suitable for long term storage and transportation. Farmers started a pitaya cultivation trend many years ago. Currently in central Taiwan (Changhua, Nantou and Taichung), the total pitaya growing area is 737.85 hectares, accounting for about 44.03%of the total planted area of 1675.92 hectares in Taiwan, and is an important production area of dragon fruit. Dragon fruit (Pitaya) is very nutritious, we usually only eat the fruit pulp, and discard the fruit peel, though the fruit peel is also with a high nutritional value. According to the Study On The Techniques Of Producing Organic Dragon Fruit Extract Powder in 2015, the high temperature cause the white variety pitaya extract powder browning. This study compares the color difference of extract powder which made under high and low temperatures, and uses the pitaya extract powder to make sausages and drinks, also creates the multi-uses of Pitaya to enhance food safety and fruit value. The research of the developing aboriginal organic agriculture and the value-added actions of agriculture specialty products There are many specialty crops with potential development, such as: millet, pigeon pea, Chenopodium formosanum Koidz and roselle, etc., have been preserved in the Aboriginal tribes of Taitung, However, the chain of industry value, organic cultivation techniques, pest and disease investigation and processing technology of these crops, have not been set up appropriately, so they could not take advantage of the proper value. In recent years, due to the labor population exodus of Aboriginal, and it engaged the manual labor in agricultural production becoming an ageing phenomenon. It’s much-needed to guide young tribal people back to involve young force. The proportion of fallow ground in Aboriginal counties is high which is in dire need of revitalization. The aim of this project is to construct the Aboriginal specialty crops’ chain of industry value in the area of Taitung. And it requires a combination of scientific research and industrialization of agricultural marketing to active the tribal economy, maintain agro-ecological sustainable development and enhance industrial competitiveness. The Study on Customers Loyalty to \\\\\"Local Production and Consumption\\\\\" in Organic Agriculture of Hualien. “Local Production for Local Consumption” means that the production which products in local and consumes them in local, too. The idea wants to reduce transportation costs and rural regeneration by shorten distance between producers and consumers. It is a way to enhance the economic and agriculture sustainable development. There are some organic agricultural products selling pots for “production for local consumption” in Taiwan, such as farmer market and direct sale stations. In order to understand consumers thought and their acceptance about the concept of locally produced and marketed campaign, and to know what factors may influence their purchase intention. Therefore, the research is going to aim to customer royalty, utilize the consequences to build market segment and raise operating income.
